A current project is the book Chasing Stars – Tales From The Kitchens & Tables Of Michelin-Starred Restaurants In France. It unfolds the story of French chefs' quest for Michelin recognition in the prestigious restaurant guide. We take readers behind the scenes in the Michelin-starred kitchens of France to witness the creation of the dishes that have earned chefs their place in Le Guide Michelin. In doing this work, we found ourselves in the kitchens with the top chefs of the country as they create their award-winning dishes.

One gloriously sunny afternoon in Provence we spent time with Chef Thierry Bonfante at his restaurant Le Temps de Vivre, at Les Farjons, just outside Orange. Chef Bonfante had made the choice to step out of the Michelin race and was running this small place with just a handful of staff.
