A project that never saw the light of day was a book to be called, Chasing Stars – Tales From The Kitchens & Tables Of Michelin-Starred Restaurants In France

It was to tell the story of French chefs' quest for Michelin recognition in that prestigious restaurant guide. In researching the book, I was able to get behind the scenes in a couple of dozen Michelin-starred kitchens in France to witness the creation of the dishes that earned chefs their place in Le Guide Michelin

One gloriously sunny afternoon in Provence I spent time with Chef Thierry Bonfante at his restaurant Le Temps de Vivre, at Les Farjons, just outside of Orange. Chef Bonfante had made the choice to step out of the Michelin race and was running this small place with just a handful of staff.
